150g. of Valfrutta dried Spelt - Classic Products range
1 courgette
1 glass of white wine
½ small onion
extra virgin olive oil
salt and pepper

The tenderest deep golden pearl spelt, oval-shaped with a groove down its centre. Ideal accompanied by other pulses and perfect for tasty soups, imaginative cold salads and surprising desserts.
Boil the spelt in plenty of salted water for around 1 hour. In the meantime sauté the chopped onion in a little oil, add the finely chopped courgette and sauté over a high heat. Add the wine, leave to evaporate and remove from the heat. When cooked, drain the spelt and place it over the heat with the courgettes, stir and divide the mixture into 4 moulds. Serve hot or cold, heating in the oven if necessary.
