Healthy Recipes - Baby lentils

Premium Baby Lentils: small and green with a yellow seed lobe, baby lentils are full of protein and contain very little salt. They remain firm after cooking and are perfect in creamy soups, on their own or mixed with pearl barley and other cereals, and also to accompany meat and fish.

Preparation:

Boil the lentils in plenty of salted water for 40 minutes. In the meantime, wash the celery and slice it. Place the oil, mustard, a pinch of salt and the lemon juice in a bowl, beat to obtain a smooth sauce. Drain the lentils and dress with the celery and lemon sauce.
