2 150g. cans of Valfrutta Steamed Spelt 
4 plaice fillets
1 orange 
1 packet of saffron
1 knob of butter 
1 courgette 
1 slice of ham
superfine flour 
extra virgin olive oil
salt and pepper

Steamed Spelt

The fragrant, deep-brown beans are ready for use, perfect in soups, salads and side dishes. Steaming retains all the natural vitamins, mineral salts and fibres and, above all, their typical flavour and consistency.


Cut the courgette into cubes and sauté with the cubes of ham, add the spelt, salt and pepper and stir over the heat. Add the saffron dissolved in 1 spoonful of water, stir and remove from the heat. Coat the plaice fillets with flour and sauté with 3 spoonfuls of oil and the butter knob. Use a spatula to turn the fillets over and sprinkle the surface with the grated orange rind. Salt and pepper to taste and remove from the heat. Serve accompanied with spelt.

Leave out the ham for a dish with a lower protein content.
