Ingredients

1 400g. can of Valfrutta Runner Beans, picked and canned on the same day
1 150g. can of Valfrutta Steamed Chickpeas
4 cod or hake fillets
1 sweet and sour pepper 
1 slice of bread 
1 teaspoon of pickled capers
1 small bunch of parsley
extra virgin olive oil 
salt and pepper

Valfrutta Runner Beans are so tender and delicate because they are carefully selected and canned on the same day, to retain their natural flavour and freshness. A natural source of protein, they are ideal served simply with a small amount of oil, salt and lemon, or perfect to enliven and add a dash of colour to traditional second courses or mixed salads.

Steamed chickpeas

Big and tasty, Valfrutta Steamed Chickpeas are full of vitamins, fibre and essential substances for our bodies, ideal for preparing imaginative first and second courses, but also delicious appetizers and single dishes. Steaming retains all the vitamins, mineral salts and fibres and, above all, the full flavour and typical firm and compact consistency.

Preparation:

Place the hake fillets in a steamer or a low pan with a little water and cover. Cook for 10' over a low heat. Drain the runner beans and place them in the blender, add the parsley, the chickpeas, the bread broken into pieces, the capers and half the bell pepper. Add 4 spoonfuls of oil, salt and pepper and blend to obtain a thick cream. Serve the fish on a bed of runner bean cream and garnish with the remaining pepper.
