1 100g. packet of Valfrutta Lamb's Lettuce
300g. of thinly sliced fresh salmon fillets 
1 lime, 100g. of fresh spreading cheese 
1 small bunch of dill (or parsley) 
200g. of durum wheat bread 
pink pepper 
extra virgin olive oil 
salt

Lamb's lettuce

Valfrutta Lamb's Lettuce is grown in Italy using the integrated farming method, and its tender leaves are picked one by one at a very early stage of growing. The plants are sown very close together, so the long and slender leaves grow in close proximity to each other, giving them a fresh and delicate flavour. The product is already washed and cut, ready for use in a truly unique dish.

Preparation:

1 - Place the salad on 4 plates and cover with the salmon slices.
2 - Mix the lime juice, dill, salt and oil in a bowl. Pour over the salmon and leave to marinate. 

3 - Cut the bread into slices and spread with the goat's cheese. Garnish with pink pepper and dress with oil and salt.
4- Place the croutons around the salmon and serve.
